Will we be eating insects in the gourmet dishes of the future?

Faced with the challenge of feeding more than 9 billion people by 2050, insects are emerging as an innovative, nutritious, and sustainable alternative. In this discussion, Dr. José Miguel Soriano del Castillo, a graduate and PhD in Pharmacy from the University of Valencia, and a graduate in Human Nutrition and Dietetics, will answer questions about how insects are raised, which species are edible (crickets, beetles, mealworms, etc.), examples of foods made with insects, and the environmental advantages of their production. The cultural and legal barriers that hinder their acceptance in many regions of the world will also be addressed. The discussion will be moderated by Cristina Sáez, a science and health journalist. She currently coordinates the science supplement of the newspaper ARA and writes for National Geographic and other media outlets, such as Agencia Sinc. Ticket: €6.
